In 1926, Dante Scapigliati opened his patisserie in Florence, drawing on his experience in biscuit and pastry production gained during years spent at the "Digerini e Marinai" biscuit factory. Facing the modern consumer society, his son Giorgio was able to maintain the artisanal quality of the product on one hand, while respecting the need for greater production on the other. This was achieved through the construction of certain machines that faithfully replicated the "handmade method".

Today, Giorgio Scapigliati's sons, Roberto and Daniele, continue the family pastry tradition with respect, passion, and dedication. The pursuit of high-quality ingredients and constant refinement of recipes guide them in their daily work.
