The Japanese GYUTOH knife from the MIYABI 5000MCD series, available in sizes 20 or 24 cm, impresses primarily with its extremely thin yet stable blade, featuring an authentic Japanese profile. The blade edge is symmetrically angled at 19°, ensuring that both sides of the Honbazuke-polished blade have exceptional sharpness. This allows you to prepare even the most exquisite dishes in no time. The knife blade contains a MicroCarbide MC63 steel core, surrounded by 100 layers. This creates a unique Damascus pattern for each knife. Additionally, the CRYODUR blade, hardened at -196°C, boasts an extraordinary hardness of approximately 63 HRC. To enhance handling and visual appeal, the knife handle is shaped like a D and made from beautiful Masur birch wood, which also features a unique grain pattern.
