The photo shows the Caffè dolce composition, which is a mix of the highest quality pasta dedicated to Spaghetti, delicious dried Italian tomatoes, two coffee blends, as well as pasta sauce with chilli and two types of marinated Leccina olives.

This delicious set is housed in a stylish Italian metal basket with eco-leather handles. Inside, you will also find black paper shreds to provide a soft bed for your products.

De Carlo is a family business spanning generations, with roots dating back to 1598. All historical information comes from public documents stored in the State Archives in Bari, Catasto Onciario, and the Treasury Books of Bitritto, the National Library of Bari, and the private family archive. The history of De Carlo products was born, evolves, and continues here, day by day, among the family's centuries-old olive trees, dry stone walls, land of typical scarlet hue, Mediterranean climate, and white stones. The favourable climate of the region, particularly north of Bari, has always contributed to the extraordinary taste of olive oil with a hint of almonds.

Gnarled trunks and deep roots: centuries-old olive trees are a symbol of Apulia, where most of the olive oil consumed, loved, and appreciated in Italy and worldwide has been produced for over three thousand years. Although the oldest evidence of olive use dates back to prehistoric times, it was probably the ancient Messapians who first introduced olive tree cultivation in Apulia.

Olive oil produced in traditional stone mills

The De Carlo farm currently spans 100 hectares, with a total of 18,000 olive trees and vegetable plants, the latter used for preserving production. All De Carlo products are made with respect for tradition and craftsmanship, as well as a strong focus on building facilities, striving to have the latest generation systems. Olive oil is still produced in traditional stone mills, as it was in the past, integrated with a modern and technologically advanced system.

Organic production at the De Carlo farm

The De Carlo family has been producing organic products since the early 1990s, as they deeply believe that consumer health should come first. Currently, the entire farm is managed organically, even if only part of the production is certified as such.

The De Carlo brand produces 5 labels, 3 of which come exclusively from its own olive groves: Tenuta Torre di Mossa DOP, Tenuta Arcamone DOP from organic farming, Felice Garibaldi olive oil, the latter from the Slow Food Presidium, and 2 selections from chosen and qualified local producers: Classic and Contrada Torre Marina from organic farming. All five selections are produced from olives harvested in the Bitritto area. A line of vegetable preserves in extra virgin olive oil, marinated olives, pasta sauces, and delicate creams has also been created, both in conventional and organic lines using their own vegetables. All pickles are sourced from vegetables grown on their own farms, processed within 24 hours of harvest.

The manufactory holds the ICEA certification for Europe and USDA Organic 100% for the USA. To enhance the food safety system, the H.A.C.C.P. system has been integrated with product control systems such as BRC and IFS to track all flows within the production facility. Additionally, the company implements a policy focused on a short supply chain: most raw materials come from its own fields.

The De Carlo family has always believed in the value of combining innovation and tradition, which has led to their success. The delicate range of products consists of various types of oils, olives, pickled vegetables, and spices.

Mariano Mancini founded Azienda Agricola Mancini in 1938, and his son Giuseppe expanded it from 5 hectares to 70 hectares by combining farming with business development in the footwear sector. He also passed on to his son Massimo the solidity and groundedness, values that enabled him to pursue his own dreams. Thus, Massimo Mancini completed his agricultural studies in Bologna under Giorgio Stupazzoni, an economist specialising in pasta production chains. This is how the dream of a pasta manufacturing company was born.

In 2010, Massimo Mancini established Mancini Pastificio Agricolo, where pasta is made exclusively from wheat grown on their own fields, surrounding the brand on all sides. Some call it a company in the middle of wheat fields growing on 300 hectares.

Good Agricultural Practice is a set of characteristics that Mancini Pastificio Agricolo applies for environmentally friendly and sustainable management of agricultural activities, aiming to produce the highest quality and healthiest raw material with minimal environmental impact and zero chemical residue.

The objectives of the company's Good Agricultural Practice are:

- to respect natural resources (air, water, soil) by optimising agronomic interventions and rationalising external inputs;
- to produce high-quality raw material that is most suitable for our transformation process;
- to ensure the health safety of the final product.

These objectives are achieved through constant monitoring of crops and the implementation of self-control measures during the production process, such as frequent analyses of soils, plants, or pathogen activities. Crop rotation is practised to maintain and improve soil fertility, alternating annually with durum wheat and improving crops (alfalfa, clover, fava beans, peas, chickpeas) or renewing crops (sunflower).

The material chosen for the packaging in which the pasta is packed is the result of continuous research with industry experts to ensure the best possible preservation of the pasta combined with maximum recyclability of the packaging. Made exclusively from cellulose sourced from wood from forests managed according to strict environmental, social, and economic standards (FSC® trademark), the bag can be entirely disposed of with paper. The ATICELCA® 501 UNI 11743 method certifies the degree of recyclability.
